オリーブの実を搾ると、油分の約75％がオリーブオイルになりますが、残り約25％は搾り果実の中に残っています。それを讃岐牛に食べさせ有効活用したのが「オリーブ飼料」です。オリーブ飼料を食べた牛のふんは、たい肥となり、オリーブ栽培等の健康的な土づくりに役立てられます。When olives are pressed, 75% of the oil content becomes olive oil, while 25% remains inside the pulp. “Olive Feed”, which is fed to Sanuki Cattle, effectively utilizes the oil contained in olive pulp. The manure of olive-fed cattle becomes compost, which is then used to create healthy soil for olive cultivation.

オリーブ飼料には、14.6％の粗脂肪を含みます。この飼料を食べた牛は、オリーブオイルの含まれる良質のオレイン酸なども摂取することになります。Olive feed contains 14.6% of crude fat. Olive-fed cattle ingest the high quality oleic acid contained in olive oil.
黒紫色に熟したオリーブ果実を手作業で収穫します。Olives ripened to a dark purple color are harvested by hand.
果実を搾油機にかけて、高品質のエキストラバージンオリーブオイルを搾ります。搾り果実は、生のままでは渋みが強く牛は好んで食べません。Olive fruit is put through a press machine to create a high quality extra-virgin olive oil. Cattle will not eat raw olive pulp because of its strong astringent taste.
脱水した搾り果実を100kg型と50kg型の乾燥機でかくはんしながら乾燥させます。100度の熱風で約8時間。天日干しをしていたころは手作業でかきまぜながら2週間もかかったそうです。Dehydrated olive pulp is placed in 100 kg or 50 kg drying machines, where it is stirred until dry. With an air temperature of 100 degrees, this process takes approximately 8 hours. In the past when olive pulp was sun-dried, it would be stirred by hand for as long as 2 weeks.
乾燥した搾り果実はカラメルのような甘い香り。ほのかな甘味で牛のし好性がアップします。Dried olive pulp has a sweet, caramel-like smell. This slight sweetness makes olive feed more palatable for cattle.
